Egusi soup |
| Ingredients |
Meat or fish (about 1kg)
2 tomatoes
1 onion
4 peppers
2 maggi cubes
Cooking oil
1 cup of grounded egusi
Salt |
| Boil the meat of fish untill it is tender. Keep it aside. Ground the tomatoes, pepper and onions together (add a little water). Pour in a pot, add meat or fish and the maggi cubes. Add about 2 tablespoonfull of cooking oil and the grounded egusi. Cook for 20 to 30 minutes. Add salt and grounded pepper to taste. |

Ogbono soup |
| Ingredients |
Meat or chicken(cut into smaller pieces and cook)
Fresh or smoked fish (bones removed and cleaned)
Palm oil (2-4 tablespoons)
2 tomatoes (grounded)
1 pepper (grounded)
1 onion (grounded)
2 maggi cubes
Grounded ogbono (use as much as the thickness desired)
Salt |
| Preparations |
Fry all the grounded ingredients untill tender. Add maggi cubes and water. Mix the grounded ogbono with the palm oil and add to the boiling mixture, stirring very well to avoid lumps. Add meat . After boiling for 10 minutes add the fish. cook on medium heat for about 20 minutes. You can also add spinach , okro, bitter leaf , ewedu or okazie 10 minutes before it is cooked. |

Fried rice |
Rice
Chopped meat
Vegetables
Onions
Spices
Seasoning (according to desire) |
| Cook some white rice and set it aside. In another pot put some chooped meat, vegetable, onions, spices and what ever you want in the seasoning. fry for about 10 minutes. Put the rice in it and stir prefarably with a wooden spoon untill it is well mixed. Repeat untill the fried rice is done. |

Pepper soup |
2-4 fresh tomatoes
1-3 pepper
Meat, chicken or fish.
4 maggi cubes
Palm oil
2 onions
Salt
Dry pepper |
| Place the meat in a pot, add very little water, dice one onion in with some salt. Cook the meat until it is tender. Grind the tomatoes and the pepper together. You might grind another onion with the tomatoes and pepper. Pour the blended tomato mixture into the pot with the meat. Add the palm oil . Cook for 20-30 minutes, stirring constantly. Add salt and dry pepper to taste. |

Fish pepper soup |
Fish stock
About 350 grams fresh fish or smoked fish
Red pepper
Green pepper
3 large tomatoes, skinned, without seed and diced.
Salt and pepper
lemon juice (1 tea spoonfull) |
| Bring the stock to boil. Sprinkle the fish filets with lemon juice and allow to stand for a few minutes. Cook all the ingredients until well cooked. Add the stock, cook for 10 minutes . Add the fish , cook, then lower the heat and add the seasoning. |

Jollof rice |
4 cups of white rice
2 tomatoes
1 bell pepper
8 ounces canned tomatoes/90millilitres tomaten paste
Onion
Salt
Dry red pepper
4 Maggi cubes |
Put the rice and about 6 cups (about 1.5 liters) of water into a pot and place on high heat. Blend the ingredients until they are smooth in texture. Let the rice cook for 10-15 minutes. Add the pepper mixture or the tomato/pepper mixture. Add enogh water to allow the rice to complete cooking. It is better to add little water and always check than to add too much water. Add the maggi and salt. Add the dry pepper as well. Switch the heat to allow it to dry of excess water without making the rice much softer. |

Dodo |
A few plantains(Unripe plantains are usually green in color and hard. As they ripen, they become more yellowish in color and a little softer. When they are too ripe, they have black patches and are usually soft.)
Vegetable oil.

| Pour some vegetable oil into a frypan and place on a low heat. Slice each plantain diagonally so tha teach slice is about a 0.5 inches thick. Place the slices into the hot oil by spreading over the bottom of the frypan. Turn over when the bottom sides are golden brown in color. Remove when the other side is also golden brown. |

Suya |
Meat (sliced)
Ground hot pepper

2 sliced tomatoes
2 Sliced onions
Ground kulikuli (to cover the meat)
Mixed spices(optional)

| Mix the grounded pepper, the salt and the kulikuli. If available, mix also the spices together. Put the meat inside the mixture and make sure it is coated very well with the mixture. Put the slices of meat into a metal skewer. Add the sliced tomatoes and onions inbetween the pieces of meat. Roast on top of charcoal fire, barbecue maker. Roast one side of the meat and turn over to the other side. |

Puff-puff |
2 cups of flour
2 cups of water
Half cup of sugar
2 teaspoonful of yeast
Vegetable oil |
| Mix the flour, sugar, water and yeast together until the batter is smooth. Wait until the dough has risen(2-3hrs). Put vegetable oil into a pan(the oil should be 5 centimeters high), place on low heat. When the oil is hot enough, use a spoon to dish up the batter and another spoon to or spatula to drop it in the oil. Fry for a few minutes until the bottom side is golden brown. Turn the ball over and fry for a few more minutes until the other side is golden brown. Remove from the oil with a large spoon. If disired roll the finished product in table sugar or powdered sugar to make it sweeter. |

Sausage rolls |
3 cups flour
2 eggs
Half tablespoon salt
A quarter pound of butter
Half cup of water
1 egg yolk
Sausage pieces. |
| Combine the flour, butter, eggs, water and salt together. Knead the dough and leave it for about 2 hours. cook the sausage, add spice to it if you want. Preheat the oven to about 300 degrees. Roll out some dough (not too thick). Cut rectangular strips of the dough about 3 inches wide(8 cm). Put a piece of saussage at the end of the dough strip. Roll the dough around the saussage until it is completely covered. Cut that portion off the strip. Pepeat until you arre out of dough. Brush the exterior of all the sausage rolls with the egg white. Place the sausage rolls on a sheet with a little space inbetween each other. Bake untill slightly brown. |

Meat pies |
6 cups of flour
4 eggs
1 tablespoonfull salt
Half a pound of butter
One and half cup of water
16 oz of grounded meat
2 medium sized potatoes
Spice |
Combine the flour, butter, eggs, water and salt together. Knead the dough; cover and leave for about 3 hours. Dice the potatoes into little cubes. Place the potatoes, meat, water and any other spice into a small saucepan. Cook till meat is done.
Preheat the oven to about 300 degrees. Cut the dough into a 'circle' (use a tool). For each 'circle' add a few teaspoons of the mixture in the middle of the circle, fold the circle over and use a fork to press the ends together. Repeat till you run out of dough. Brush the exterior with egg yolk, place the meat pie in a baking sheet and bake till slightly brown. |

Chin chin |
6 cups of flour
2 cups butter or margarine
3 eggs
1 teaspoonful baking powder
1 cup of water
1 cup of milk
8 tablspoonful of sugar. |
Mix all ingredients together . Mix the dough until it is smooth.
Place some powder on a cutting board. Place some dough on the cutting board and flatten it to about half an inch thick. Cut the dough into little squares. Pour some oil in a pan and place on a burner/stove. Once the oil is hot, place a few handfuls of the cut pieces into the oil. Allow the chin chin to deep fry until brown. |

Kulikuli |
| Peanuts |
| Ground the peanuts. Squeeze the oil out of the peanuts, the paste is fried in oil. The resultant produce is kulikuli. |
